Ingredients

  • 2 medium zucchinis, grated (about 2 cups)
  • 1 teaspoon salt
  • 1 cup shredded mozzarella cheese
  • 1/2 cup almond flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon black pepper
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out excess moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove as much liquid as possible.
  3. In the same bowl, add the squeezed zucchini, mozzarella cheese, almond flour, eggs, garlic powder, onion powder, baking powder, and black pepper. Mix until well combined.
  4. Divide the mixture into 4 equal portions and shape each portion into a bagel shape on the prepared baking sheet, making a hole in the center.
  5. If desired, sprinkle sesame seeds on top of each bagel.
  6. Bake in the preheated oven for 20-25 minutes, or until the bagels are golden brown and firm to the touch.
  7. Allow the bagels to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
