- 2 medium zucchinis, grated (about 2 cups)
- 1 teaspoon salt
- 1 cup shredded mozzarella cheese
- 1/2 cup almond flour
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon black pepper
- 1 tablespoon sesame seeds (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out excess moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove as much liquid as possible.
- In the same bowl, add the squeezed zucchini, mozzarella cheese, almond flour, eggs, garlic powder, onion powder, baking powder, and black pepper. Mix until well combined.
- Divide the mixture into 4 equal portions and shape each portion into a bagel shape on the prepared baking sheet, making a hole in the center.
- If desired, sprinkle sesame seeds on top of each bagel.
- Bake in the preheated oven for 20-25 minutes, or until the bagels are golden brown and firm to the touch.
- Allow the bagels to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For added flavor, mix in chopped herbs like dill or chives into the dough.
- If you prefer a different cheese, try using cheddar or pepper jack for a spicy kick.
