- 2 pounds oxtail, cut into pieces
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, chopped
- 1 bell pepper, diced
- 2 medium tomatoes, chopped
- 4 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons Worcestershire sauce
- 1 tablespoon cornstarch mixed with 2 tablespoons water (optional for thickening)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the oxtail pieces and brown them on all sides, about 8-10 minutes. Remove the oxtail and set aside.
- In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent, about 5 minutes.
- Add the carrots, celery, and bell pepper to the pot. Cook for an additional 5 minutes, stirring occasionally.
- Stir in the chopped tomatoes, beef broth, thyme, paprika, bay leaf, Worcestershire sauce, salt, and pepper. Bring the mixture to a boil.
- Return the browned oxtail to the pot. Reduce the heat to low, cover, and let it simmer for 2 to 3 hours, or until the oxtail is tender and the meat is falling off the bone.
- If you prefer a thicker stew, stir in the cornstarch mixture and cook for an additional 5 minutes.
- Remove the bay leaf before serving. Garnish with chopped parsley and serve hot.

- For a spicier kick, add a diced jalapeño or a pinch of cayenne pepper during cooking.
- Serve the stew over rice or with crusty bread to soak up the delicious sauce.
