Description

Discover the ultimate spicy sauce with this Zhoug Recipe (Zhug), a vibrant herb sauce perfect for enhancing your meals.

Ingredients

Scale
  • 1 cup fresh cilantro, tightly packed
  • 1 cup fresh parsley, tightly packed
  • 23 green jalapeño peppers, with stems removed (adjust for desired heat)
  • 4 cloves garlic, peeled
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon salt (or to taste)
  • 1/4 cup high-quality olive oil
  • 2 tablespoons freshly squeezed lemon juice

Instructions

  1. Begin by placing the cilantro, parsley, jalapeños, garlic, cumin, coriander, and salt into a food processor. Blend until the mixture is finely chopped and well combined.
  2. While the processor is running, gradually pour in the olive oil, allowing it to emulsify with the herb mixture until it reaches a smooth consistency.
  3. Incorporate the lemon juice by pulsing the mixture a few times to ensure it’s evenly distributed. Taste the sauce and adjust the seasoning if necessary.
  4. Spoon the spicy herb sauce into a clean jar or an airtight container, then let it chill in the refrigerator for at least half an hour to enhance the flavors.
  5. This vibrant sauce pairs beautifully with grilled meats, roasted vegetables, or can be used as a zesty spread on your favorite sandwiches.

Notes

  • For a milder flavor, consider removing the seeds from the jalapeños before blending.
  • You can also add a handful of fresh mint for a refreshing twist or swap lemon juice for lime juice for an extra zing.
