  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons lime juice (about 1 lime)
  • 1 teaspoon lime zest
  • 1 tablespoon fish sauce
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  2. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  3. Add the diced red bell pepper, cherry tomatoes, ground cumin, and paprika. Cook for another 3-4 minutes until the vegetables begin to soften.
  4. Pour in the coconut milk and fish or chicken broth. Bring the mixture to a gentle simmer.
  5. Add the fish pieces to the pot and cook for about 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.
  6. Stir in the lime juice, lime zest, and fish sauce. Season with salt and pepper to taste.
  7. Remove from heat and let the soup sit for a few minutes to allow the flavors to meld.
  8. Serve hot, garnished with fresh cilantro and lime wedges on the side.
