Ingredients

  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 2 tablespoons zaatar seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 400°F.
  2. In a mixing bowl, combine the drained chickpeas, olive oil, zaatar seasoning, salt, and black pepper. Toss until the chickpeas are well coated.
  3. Spread the chickpeas in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until golden and crispy, shaking the pan halfway through.
  4. While the chickpeas are roasting, prepare the salad. In a large bowl, combine the cherry tomatoes, cucumber, red onion, parsley, and feta cheese (if using).
  5. Once the chickpeas are done, let them cool for a few minutes before adding them to the salad bowl.
  6. Drizzle the lemon juice over the salad and toss gently to combine. Serve immediately or chill in the refrigerator for 30 minutes for enhanced flavors.
