  • 3 tablespoons olive oil
  • 2 tablespoons za’atar spice blend
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
  2. Remove the leaves from the cauliflower and trim the stem, keeping the head intact.
  3. Slice the cauliflower into 1-inch thick steaks, yielding about 4-6 steaks.
  4. In a small bowl, mix together the olive oil, za’atar, garlic powder, salt, and black pepper.
  5. Brush both sides of each cauliflower steak with the olive oil mixture.
  6. Arrange the cauliflower steaks on the prepared baking sheet.
  7. Roast in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and tender.
  8. Remove from the oven and drizzle with lemon juice, then garnish with chopped parsley before serving.
