- 1 peach, sliced
- 1 cup cooked quinoa

Instructions
- In a bowl, mix the za’atar spice with olive oil to create a marinade.
- Coat the chicken breasts with the marinade and let them sit for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked.
- Remove the chicken from the grill and let it rest for a few minutes before slicing.
- In a bowl, layer the cooked quinoa, sliced peaches, and grilled chicken.
- Top with crumbled feta cheese and garnish with fresh mint leaves.
