Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, chilled and cubed
  • ¼ cup powdered sugar
  • 1 large egg yolk
  • 23 tablespoons cold water
  • 1 cup fresh raspberries
  • ½ cup yuzu juice (or substitute with lemon juice)
  • ¾ cup granulated sugar
  • 2 large eggs
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Powdered sugar for dusting
  • Fresh raspberries for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch tart pan with removable bottom.
  2. In a mixing bowl, combine the flour and powdered sugar. Add the chilled butter and mix until the mixture resembles coarse crumbs.
  3. Stir in the egg yolk and enough cold water to form a dough. Press the dough into the bottom and up the sides of the prepared tart pan. Prick the bottom with a fork.
  4. Bake the crust for 15-20 minutes, or until lightly golden. Remove from the oven and let it cool.
  5. In a medium bowl, whisk together the yuzu juice, granulated sugar, eggs, cornstarch, vanilla extract, and salt until smooth.
  6. Gently fold in the fresh raspberries. Pour the filling into the cooled tart crust.
  7. Bake the tart for an additional 25-30 minutes, or until the filling is set and slightly golden.
  8. Allow the tart to cool completely at room temperature, then refrigerate for at least 2 hours before serving.
  9. Before serving, dust the top with powdered sugar and garnish with fresh raspberries.

Notes

  • For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.
  • Add a layer of whipped cream on top of the tart for extra creaminess and flavor.
