- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, chilled and cubed
- ¼ cup powdered sugar
- 1 large egg yolk
- 2–3 tablespoons cold water
- 1 cup fresh raspberries
- ½ cup yuzu juice (or substitute with lemon juice)
- ¾ cup granulated sugar
- 2 large eggs
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- Pinch of salt
- Powdered sugar for dusting
- Fresh raspberries for garnish
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch tart pan with removable bottom.
- In a mixing bowl, combine the flour and powdered sugar. Add the chilled butter and mix until the mixture resembles coarse crumbs.
- Stir in the egg yolk and enough cold water to form a dough. Press the dough into the bottom and up the sides of the prepared tart pan. Prick the bottom with a fork.
- Bake the crust for 15-20 minutes, or until lightly golden. Remove from the oven and let it cool.
- In a medium bowl, whisk together the yuzu juice, granulated sugar, eggs, cornstarch, vanilla extract, and salt until smooth.
- Gently fold in the fresh raspberries. Pour the filling into the cooled tart crust.
- Bake the tart for an additional 25-30 minutes, or until the filling is set and slightly golden.
- Allow the tart to cool completely at room temperature, then refrigerate for at least 2 hours before serving.
- Before serving, dust the top with powdered sugar and garnish with fresh raspberries.
Notes
- For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.
- Add a layer of whipped cream on top of the tart for extra creaminess and flavor.
