Description

Yuzu Curd & Blueberry Galettes are a delightful treat featuring a tangy yuzu curd and fresh blueberries wrapped in a flaky pastry.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup ice water
  • 1 cup fresh blueberries
  • 1/2 cup yuzu curd (store-bought or homemade)
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (for sprinkling)

Instructions

  1. In a large bowl, combine the flour, salt, and granulated sugar. Add the cold, cubed butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness. Cut out circles using a 5-inch round cutter or a bowl.
  5. Place the dough circles on the prepared baking sheet. Spoon about 2 tablespoons of yuzu curd in the center of each circle, leaving a 1-inch border. Top with a few blueberries.
  6. Fold the edges of the dough over the filling, pleating as you go to create a rustic edge.
  7. Brush the edges with beaten egg and sprinkle with coarse sugar.
  8. Bake for 20-25 minutes, or until the crust is golden brown and the blueberries are bubbly.
  9. Allow to cool for a few minutes before serving.

Notes

  • For a richer flavor, try adding a teaspoon of vanilla extract to the yuzu curd before filling the galettes.
  • You can also substitute the blueberries with raspberries or blackberries for a different twist.
