Ingredients

  • 1/4 cup chia seeds
  • 1/4 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • Zest of 1 lemon
  • 1/4 cup freshly squeezed lemon juice
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a medium bowl, whisk together the almond milk, Greek yogurt, honey (or maple syrup), lemon zest, lemon juice, vanilla extract, and salt until smooth.
  2. Stir in the chia seeds until well combined.
  3. Cover the bowl and refrigerate for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and thicken the pudding.
  4. Once set, give the pudding a good stir before serving.
  5. Divide the pudding into serving bowls or jars and top with fresh fruit, nuts, or additional lemon zest if desired.

Notes
