Ingredients

- 1 cup unsweetened almond milk
- 1/4 cup chia seeds
- 1/4 cup Greek yogurt
- 1/4 cup honey or maple syrup
- Zest of 1 lemon
- 1/4 cup freshly squeezed lemon juice
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a medium bowl, whisk together the almond milk, Greek yogurt, honey (or maple syrup), lemon zest, lemon juice, vanilla extract, and salt until smooth.
- Stir in the chia seeds until well combined.
- Cover the bowl and refrigerate for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and thicken the pudding.
- Once set, give the pudding a good stir before serving.
- Divide the pudding into serving bowls or jars and top with fresh fruit, nuts, or additional lemon zest if desired.
Notes
- For a tropical twist, substitute the lemon juice and zest with lime juice and zest.
- Add a handful of berries or sliced bananas on top for extra flavor and nutrition.
