Ingredients

  • 1 teaspoon vanilla extract

Instructions

  1. In a small saucepan, combine the honey and dried lavender. Heat over low heat for about 5 minutes, stirring occasionally, until the honey is infused with the lavender flavor. Remove from heat and let it cool for 10 minutes. Strain the mixture to remove the lavender buds and set the honey aside.
  2. In a mixing bowl, combine the Greek yogurt, strained honey, vanilla extract, salt, and lemon juice. Stir until well combined and smooth.
  3. Pour the yogurt mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually about 20-25 minutes, until it reaches a soft-serve consistency.
  4. Transfer the yogurt ice cream to an airtight container and freeze for at least 2 hours to firm up.
  5. Serve the ice cream in bowls or cones, and if desired, drizzle with additional honey or sprinkle with fresh lavender for garnish.

Notes

  • For a fruitier version, blend in 1 cup of fresh or frozen berries before churning.
  • If you don’t have an ice cream maker, pour the mixture into a shallow dish and freeze for 4-6 hours, stirring every 30 minutes until it reaches the desired consistency.
