Ingredients

  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon cumin powder
  • 1 tablespoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon cinnamon powder
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon sea salt
  • 4 cups beef stock
  • 1 can (14.5 ounces) crushed tomatoes, with juice
  • 1 cup sliced carrots
  • 1 cup diced potatoes
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup water
  • 1 tablespoon fenugreek seeds
  • 1/2 cup whipping cream

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté until soft and translucent, about 5 minutes.
  3. Incorporate the minced garlic and cook for another minute.
  4. Add the beef cubes to the pot, searing them until browned on all sides, roughly 5-7 minutes.
  5. Sprinkle in the cumin, coriander, turmeric, cinnamon, black pepper, and sea salt, stirring to coat the beef with the spices.
  6. Gradually pour in the beef stock and add the crushed tomatoes, sliced carrots, and diced potatoes.
  7. Bring the mixture to a vigorous boil, then lower the heat to a gentle simmer.
  8. Cover the pot and let it cook for 1.5 to 2 hours, stirring occasionally, until the beef is tender.
  9. While the stew simmers, prepare the fenugreek topping by combining fenugreek seeds and water in a small saucepan and bringing it to a boil.
  10. Reduce the heat and let it simmer for about 10 minutes, then remove from heat and cool slightly.
  11. Blend the fenugreek mixture with the whipping cream until smooth and airy.
  12. Once the stew is finished cooking, taste and adjust the seasoning as needed.
  13. Serve the stew hot, garnished with fresh cilantro and a spoonful of the creamy fenugreek topping.
