- 2 pounds beef stew meat, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 tablespoon cumin powder
- 1 tablespoon coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon cinnamon powder
- 1 teaspoon freshly ground black pepper
- 1 teaspoon sea salt
- 4 cups beef stock
- 1 can (14.5 ounces) crushed tomatoes, with juice
- 1 cup sliced carrots
- 1 cup diced potatoes
- 1/4 cup chopped fresh cilantro
- 1/4 cup water
- 1 tablespoon fenugreek seeds
- 1/2 cup whipping cream
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the diced onion and sauté until soft and translucent, about 5 minutes.
- Incorporate the minced garlic and cook for another minute.
- Add the beef cubes to the pot, searing them until browned on all sides, roughly 5-7 minutes.
- Sprinkle in the cumin, coriander, turmeric, cinnamon, black pepper, and sea salt, stirring to coat the beef with the spices.
- Gradually pour in the beef stock and add the crushed tomatoes, sliced carrots, and diced potatoes.
- Bring the mixture to a vigorous boil, then lower the heat to a gentle simmer.
- Cover the pot and let it cook for 1.5 to 2 hours, stirring occasionally, until the beef is tender.
- While the stew simmers, prepare the fenugreek topping by combining fenugreek seeds and water in a small saucepan and bringing it to a boil.
- Reduce the heat and let it simmer for about 10 minutes, then remove from heat and cool slightly.
- Blend the fenugreek mixture with the whipping cream until smooth and airy.
- Once the stew is finished cooking, taste and adjust the seasoning as needed.
- Serve the stew hot, garnished with fresh cilantro and a spoonful of the creamy fenugreek topping.
