A delicious and nutritious wild rice dish combined with dried blueberries, perfect for a healthy meal.


Ingredients

  • 2 cups wild rice
  • 4 cups vegetable broth
  • 1 cup dried blueberries
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 cup chopped pecans (optional)
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Rinse the wild rice under cold water and drain well.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the rinsed wild rice to the pot and stir to coat the grains with the oil and onion mixture.
  5. Pour in the vegetable broth, then add the dried blueberries, salt, black pepper, and thyme. Bring to a boil.
  6. Once boiling, reduce the heat to low, cover the pot, and simmer for about 45-50 minutes, or until the rice is tender and the liquid is absorbed.
  7. If using, stir in the chopped pecans during the last 5 minutes of cooking.
  8. Remove from heat and let the rice sit, covered, for 10 minutes. Fluff with a fork before serving.
  9. Garnish with fresh parsley before serving.

Notes

  • For a sweeter dish, add a tablespoon of honey or maple syrup while cooking.
  • Substitute dried cranberries or cherries for the blueberries for a different flavor profile.
