A delicious and nutritious wild rice dish combined with dried blueberries, perfect for a healthy meal.

- 2 cups wild rice
- 4 cups vegetable broth
- 1 cup dried blueberries
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 cup chopped pecans (optional)
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Rinse the wild rice under cold water and drain well.
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the rinsed wild rice to the pot and stir to coat the grains with the oil and onion mixture.
- Pour in the vegetable broth, then add the dried blueberries, salt, black pepper, and thyme. Bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and simmer for about 45-50 minutes, or until the rice is tender and the liquid is absorbed.
- If using, stir in the chopped pecans during the last 5 minutes of cooking.
- Remove from heat and let the rice sit, covered, for 10 minutes. Fluff with a fork before serving.
- Garnish with fresh parsley before serving.
Notes
- For a sweeter dish, add a tablespoon of honey or maple syrup while cooking.
- Substitute dried cranberries or cherries for the blueberries for a different flavor profile.
