Ingredients

  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme, finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon lemon zest
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F.
  2. In a small bowl, mix together the softened butter, rosemary, thyme, parsley, garlic, lemon zest, salt, and pepper until well combined.
  3. Pat the wild boar crown roast dry with paper towels. Rub the outside of the roast with olive oil and season generously with salt and pepper.
  4. Using your hands, spread the herb butter mixture all over the meat, making sure to get it into the crevices of the roast.
  5. Place the crown roast in a roasting pan, bone side down. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 145°F for medium-rare.
  6. Remove the roast from the oven and let it rest for 15 minutes before carving.
  7. Slice the roast between the bones and serve with your favorite sides.
