- 2 to 3 pounds wild boar crown roast
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 cup unsalted butter, softened
- 2 tablespoons fresh rosemary, finely chopped
- 2 tablespoons fresh thyme, finely chopped
- 2 tablespoons fresh parsley, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon lemon zest
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F.
- In a small bowl, mix together the softened butter, rosemary, thyme, parsley, garlic, lemon zest, salt, and pepper until well combined.
- Pat the wild boar crown roast dry with paper towels. Rub the outside of the roast with olive oil and season generously with salt and pepper.
- Using your hands, spread the herb butter mixture all over the meat, making sure to get it into the crevices of the roast.
- Place the crown roast in a roasting pan, bone side down. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 145°F for medium-rare.
- Remove the roast from the oven and let it rest for 15 minutes before carving.
- Slice the roast between the bones and serve with your favorite sides.

- For a more intense flavor, marinate the crown roast in the herb butter for several hours or overnight before roasting.
- Try adding different herbs like sage or oregano to the butter for a unique twist.
