Description
Delicious and easy whole wheat crepes filled with sautéed mushrooms and spinach.
Ingredients

- 1 cup whole wheat flour
- 2 large eggs
- 1 ½ cups milk
- 2 tablespoons melted butter
- ½ teaspoon salt
- 1 tablespoon olive oil
- 8 ounces mushrooms, sliced
- 2 cups fresh spinach
- 2 cloves garlic, minced
- ¼ teaspoon black pepper
- ¼ teaspoon nutmeg
- ½ cup shredded mozzarella cheese (optional)
Instructions
- In a mixing bowl, whisk together the whole wheat flour, eggs, milk, melted butter, and salt until smooth. Let the batter rest for 30 minutes at room temperature.
- Heat a non-stick skillet or crepe pan over medium heat and lightly grease it with a little butter or oil.
- Pour about ¼ cup of the batter into the skillet, swirling it to evenly coat the bottom. Cook for 1-2 minutes until the edges lift and the bottom is lightly browned. Flip and cook for another 1-2 minutes. Remove from the skillet and repeat with the remaining batter, stacking the crepes on a plate.
- In a separate skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté for about 5 minutes until they are golden brown.
- Add the minced garlic and cook for an additional minute. Then, add the fresh spinach, black pepper, and nutmeg. Cook until the spinach is wilted, about 2-3 minutes.
- To assemble, place a crepe on a plate, spoon some of the mushroom and spinach mixture onto one half, and sprinkle with mozzarella cheese if using. Fold the crepe over and serve warm.
- Repeat with the remaining crepes and filling.
Notes
- For a gluten-free option, substitute whole wheat flour with a gluten-free flour blend.
- Add cooked chicken or tofu for extra protein and flavor.
