- 2 cups whole wheat flour

- 1 tablespoon baking powder

- 2 large eggs
- 1 3/4 cups milk
- 1/4 cup vegetable oil or melted butter
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, whisk together the whole wheat flour, sugar, baking powder, and salt until well combined.
- In a separate bowl, beat the eggs and then add the milk, vegetable oil (or melted butter), and vanilla extract. Mix until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.
- Preheat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or a small amount of oil.
- Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
- Flip the pancakes and cook for another 1-2 minutes, until golden brown.
- Remove from the skillet and keep warm while you repeat with the remaining batter.
Notes
- For added flavor, mix in 1/2 cup of blueberries or chocolate chips to the batter before cooking.
- Substitute half of the whole wheat flour with oat flour for a different texture and taste.
