Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 8 ounces white chocolate, chopped
  • 1 cup heavy whipping cream
  • 1 teaspoon peppermint extract
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 large egg whites
  • ¼ teaspoon salt
  • Crushed peppermint candies for garnish

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
  3. Press the mixture firmly into the bottom and up the sides of a 9-inch tart pan.
  4. Bake for 10 minutes, then remove from the oven and let cool completely.
  5. In a microwave-safe bowl, melt the chopped white chocolate in 30-second intervals, stirring after each until smooth. Let it cool slightly.
  6. In a large mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and continue whipping until stiff peaks form.
  7. Gently fold in the melted white chocolate and peppermint extract until just combined.
  8. In another bowl, beat the egg whites and salt until soft peaks form. Gradually add a tablespoon of sugar and continue beating until stiff peaks form.
  9. Gently fold the egg whites into the white chocolate mixture until no white streaks remain.
  10. Pour the mousse into the cooled tart shell and smooth the top.
  11. Refrigerate for at least 4 hours or until set.
  12. Before serving, garnish with crushed peppermint candies for a festive touch.

Notes

  • For a richer flavor, try adding a tablespoon of cocoa powder to the crust mixture.
  • If you prefer a chocolate tart, substitute half of the white chocolate with semi-sweet chocolate.
