Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 6 ounces white chocolate, melted and slightly cooled
  • 1 teaspoon peppermint extract
  • 1/4 cup crushed peppermint candies (plus extra for garnish)

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
  3. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan.
  4. Bake for 8-10 minutes or until lightly golden. Remove from the oven and let cool completely.
  5. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
  6. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  7. In a separate bowl, whip the heavy cream until stiff peaks form.
  8. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  9. Pour in the melted white chocolate and peppermint extract, folding gently until the mixture is smooth and creamy.
  10. Pour the filling into the cooled graham cracker crust and spread evenly.
  11. Refrigerate for at least 4 hours or until set.
  12. Before serving, garnish the pie with crushed peppermint candies and additional whipped cream if desired.
