Description

A delicious appetizer featuring creamy whipped ricotta topped with blistered tomatoes on crispy crostini.


Ingredients

  • 1 cup ricotta cheese
  • 1/4 cup heavy cream
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • 1 baguette, sliced
  • 2 cups cherry tomatoes
  • 2 tablespoons olive oil
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine ricotta cheese, heavy cream, lemon zest, salt, and pepper. Whip until smooth and creamy.
  3. Arrange baguette slices on a baking sheet and brush with olive oil. Toast in the oven for about 5-7 minutes until golden.
  4. In a skillet, heat olive oil over medium heat and add cherry tomatoes. Cook until they blister and soften, about 5-6 minutes.
  5. Spread the whipped ricotta on the toasted baguette slices.
  6. Top with blistered tomatoes and garnish with fresh basil leaves.
  7. Serve immediately and enjoy!

Notes

  • For a lighter version, use part-skim ricotta.
  • Feel free to add balsamic glaze for extra flavor.
