- 1 cup ricotta cheese
- 1/4 cup heavy cream
- 1 teaspoon lemon zest
- Salt and pepper to taste
- 1 baguette, sliced
- 2 cups cherry tomatoes
- 2 tablespoons olive oil
- Fresh basil leaves for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine ricotta cheese, heavy cream, lemon zest, salt, and pepper. Whip until smooth and creamy.
- Arrange baguette slices on a baking sheet and brush with olive oil. Toast in the oven for about 5-7 minutes until golden.
- In a skillet, heat olive oil over medium heat and add cherry tomatoes. Cook until they blister and soften, about 5-6 minutes.
- Spread the whipped ricotta on the toasted baguette slices.
- Top with blistered tomatoes and garnish with fresh basil leaves.
- Serve immediately and enjoy!
Notes
- For a lighter version, use part-skim ricotta.
- Feel free to add balsamic glaze for extra flavor.
- Can be made ahead; just assemble before serving.
