- 1/2 cup cream cheese
- 2 tablespoons olive oil
- 1 teaspoon lemon juice
- 4 slices of bread
- 2 ripe nectarines, halved and pitted
- Honey for drizzling
- Fresh mint leaves for garnish
Instructions
- In a bowl, combine feta cheese, cream cheese, olive oil, and lemon juice. Whip until smooth and creamy.
- Preheat the grill to medium heat.
- Grill the nectarines cut-side down for about 3-4 minutes until grill marks appear and they soften slightly.
- Toast the bread slices on the grill until golden brown.
- Spread the whipped feta mixture generously on each slice of toast.
- Top with grilled nectarines and drizzle with honey.
- Garnish with fresh mint leaves before serving.
