Ingredients

  • 4 slices of bread
  • 2 ripe nectarines, halved and pitted
  • Honey for drizzling

Instructions

  1. In a bowl, combine feta cheese, cream cheese, olive oil, and lemon juice. Whip until smooth and creamy.
  2. Preheat the grill to medium heat.
  3. Grill the nectarines cut-side down for about 3-4 minutes until grill marks appear and they soften slightly.
  4. Toast the bread slices on the grill until golden brown.
  5. Spread the whipped feta mixture generously on each slice of toast.
  6. Top with grilled nectarines and drizzle with honey.
  7. Garnish with fresh mint leaves before serving.
