  • 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two small loaf pans.
  2. In a large bowl, mix the watermelon puree, sugar, and vegetable oil until well combined.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the vanilla extract and walnuts if using.
  7. Pour the batter evenly into the prepared loaf pans.
  8. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the loaves to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
