Description

A refreshing and delicious salad combining the sweetness of watermelon, the peppery taste of arugula, and the crunch of pine nuts.


Ingredients

  • 4 cups watermelon, cubed
  • 2 cups arugula
  • 1/2 cup pine nuts, toasted
  • 1/4 cup feta cheese, crumbled (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar

Instructions

  1. In a large bowl, combine the cubed watermelon and arugula.
  2. Add the toasted pine nuts and feta cheese, if using.
