Ingredients

  • 2 pounds baby potatoes, halved
  • 1/4 cup olive oil
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup spring onions, chopped (green parts included)
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Place the halved baby potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil over medium-high heat. Cook for about 15-20 minutes, or until the potatoes are tender when pierced with a fork. Drain and set aside.
  2. In a small bowl, whisk together the olive oil, Dijon mustard, apple cider vinegar, honey, salt, and black pepper until well combined.
  3. In a large mixing bowl, combine the warm potatoes and chopped spring onions. Pour the mustard dressing over the potatoes and gently toss to coat evenly.
  4. Let the salad sit for about 5 minutes to allow the flavors to meld. Garnish with fresh parsley before serving.
  5. Serve warm or at room temperature.
