- 2 pounds baby potatoes, halved
- 1/4 cup olive oil
- 2 tablespoons Dijon mustard
- 2 tablespoons apple cider vinegar
- 1 teaspoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup spring onions, chopped (green parts included)
- 1/4 cup fresh parsley, chopped
Instructions
- Place the halved baby potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil over medium-high heat. Cook for about 15-20 minutes, or until the potatoes are tender when pierced with a fork. Drain and set aside.
- In a small bowl, whisk together the olive oil, Dijon mustard, apple cider vinegar, honey, salt, and black pepper until well combined.
- In a large mixing bowl, combine the warm potatoes and chopped spring onions. Pour the mustard dressing over the potatoes and gently toss to coat evenly.
- Let the salad sit for about 5 minutes to allow the flavors to meld. Garnish with fresh parsley before serving.
- Serve warm or at room temperature.
Notes
- For added crunch, consider mixing in some diced celery or bell peppers.
- You can substitute the Dijon mustard with whole grain mustard for a different flavor profile.
