  • 2 cups broccoli florets
  • 1/2 cup sliced almonds
  • 3 tablespoons extra virgin olive oil
  • 2 cloves garlic, finely chopped
  • 1 teaspoon crushed red pepper (optional)
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Salt and freshly ground black pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Begin by boiling a large pot of salted water.
  2. Cook the whole wheat pasta according to the package directions, adding the broccoli florets in the last 2-3 minutes of cooking.
  3. Once done, drain the pasta and broccoli, saving about 1/2 cup of the cooking water.
  4. In a skillet, warm the olive oil over medium heat.
  5. Add the sliced almonds and sauté for 2-3 minutes until they turn a lovely golden hue, stirring frequently to avoid burning.
  6. Introduce the chopped garlic and optional crushed red pepper to the skillet, cooking for an additional 1-2 minutes until the garlic becomes aromatic.
  7. Combine the drained pasta and broccoli with the almond mixture in the skillet.
  8. Stir in the lemon zest, lemon juice, and the reserved pasta water.
  9. Mix everything thoroughly, seasoning with salt and pepper to your liking.
  10. If you wish, add the grated Parmesan cheese and give it another toss.
  11. Serve the dish warm, garnished with fresh parsley for an extra touch of flavor.
