Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking dish with a light coating of cooking spray or butter.
- In a large bowl, mix together the granulated sugar and melted butter until well blended.
- Incorporate the eggs, vanilla extract, and almond extract into the mixture, beating until smooth.
- In another bowl, combine the flour, baking powder, and salt, then gradually fold this dry mix into the wet ingredients until just combined.
- On a clean surface, lay out a single sheet of phyllo dough and brush it with melted butter; repeat this for five additional sheets, stacking them neatly.
- Cut the layered phyllo into squares, roughly 4×4 inches in size.
- Arrange half of these squares at the bottom of your prepared baking dish.
- Pour half of the batter over the phyllo base, spreading it evenly.
- Place another layer of six buttered phyllo squares on top of the batter, followed by the remaining batter.
- Top with the last set of phyllo squares, brushing the top with any leftover melted butter.
- Bake the cake in your preheated oven for about 35-40 minutes, or until the surface is golden brown and a toothpick inserted into the center comes out clean.
- Let the cake cool for at least 15 minutes before dusting the top generously with powdered sugar.
