Ingredients

  • 1 pound ground lamb
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup almond flour
  • 1 large egg
  • 1 tablespoon fresh cilantro, chopped (optional)
  • Cooking spray or additional olive oil for frying

Instructions

  1. In a skillet over medium heat, heat the olive oil.
  2. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the garlic and ginger, cooking for another minute until fragrant.
  4. Add the ground lamb to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
  5. Stir in the cumin, coriander, garam masala, chili powder, turmeric, salt, and pepper. Cook for another 2-3 minutes until the spices are well combined.
  6. Remove from heat and let cool slightly.
  7. In a mixing bowl, combine the mozzarella cheese, almond flour, and egg. Mix until a dough forms. If the dough is too sticky, add a little more almond flour until manageable.
  8. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  9. Divide the dough into 8 equal portions. Roll each portion into a ball, then flatten it into a circle about 1/4 inch thick.
  10. Place a spoonful of the lamb mixture in the center of each circle.
  11. Fold the dough over to create a half-moon shape and pinch the edges to seal.
  12. Place the samosas on the prepared baking sheet. Lightly spray or brush with cooking spray or olive oil.
  13. Bake for 15-20 minutes or until golden brown and crispy.
  14. Serve warm, garnished with fresh cilantro if desired.

  • For a spicier kick, add diced jalapeños to the lamb mixture.
  • For a vegetarian option, substitute the lamb with sautéed mushrooms and spinach, seasoning them with the same spices.
