- 200g feta cheese
- 400g cherry tomatoes
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 300g pasta of choice
- Fresh basil for garnish
Instructions
- Preheat the oven to 200°C (400°F).
- In a baking dish, place the feta cheese in the center and surround it with cherry tomatoes.
- Drizzle olive oil over the feta and tomatoes, then sprinkle with minced garlic, oregano, salt, and pepper.
- Bake in the preheated oven for 30 minutes, or until the feta is golden and the tomatoes are blistered.
- While the feta and tomatoes are baking, cook the pasta according to package instructions.
- Once baked, remove the dish from the oven and use a fork to mash the feta and tomatoes together.
- Add the cooked pasta to the baking dish and mix until well combined.
- Garnish with fresh basil before serving.
Notes
- For a spicier version, add red pepper flakes.
- Can substitute feta with goat cheese for a different flavor.
- Leftovers can be stored in the refrigerator for up to 3 days.
