  • 1 tablespoon canola oil
  • 1 onion, finely chopped
  • 4 cloves garlic, minced

  • 2 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon chili paste (adjust for heat preference)
  • 1 tablespoon brown sugar
  • 1 teaspoon black pepper
  • 1 teaspoon star anise
  • 1 teaspoon ground cinnamon
  • 8 ounces rice vermicelli
  • 2 cups fresh bean sprouts
  • 1 cup fresh basil leaves
  • 1 lime, cut into wedges
  • Sliced jalapeños (optional)

Instructions

  1. Heat the canola oil in a large pot over medium heat.
  2. Add the chopped onion and cook until soft and translucent, about 5 minutes.
  3. Incorporate the minced garlic and grated ginger, stirring for another 1-2 minutes until aromatic.
  4. Pour in the beef stock, followed by the fish sauce, soy sauce, chili paste, brown sugar, black pepper, star anise, and ground cinnamon.
  5. Increase the heat until the mixture reaches a boil, then lower the heat and let it simmer for 30 minutes.
  6. Prepare the rice vermicelli according to the package instructions, then drain and set aside.
  7. After the broth has simmered, introduce the sliced beef brisket and let it cook for an additional 10 minutes, or until the meat is tender.
  8. To assemble, place a serving of rice vermicelli in a bowl, ladle the steaming beef broth over the noodles, and garnish with fresh bean sprouts, basil leaves, and optional jalapeño slices.
  9. Serve with lime wedges for an extra zing.
