Description

  • 2 cups rice flour
  • 1 cup coconut milk
  • 1 cup water
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon salt
  • 1 tablespoon vegetable oil
  • 1 cup cooked and shredded chicken or shrimp
  • 1 cup bean sprouts
  • 1/2 cup sliced green onions
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup fresh mint leaves, chopped
  • Lime wedges for serving
  • Sriracha or hoisin sauce for serving

Instructions

  1. In a large mixing bowl, combine the rice flour, coconut milk, water, turmeric powder, and salt. Whisk until the batter is smooth and well combined. Let the batter rest for about 30 minutes.
  2. Heat a non-stick skillet over medium heat and add 1 teaspoon of vegetable oil. Once hot, pour in about 1/2 cup of the batter, swirling the pan to create a thin layer.
  3. Cook for about 2-3 minutes until the edges start to lift and the bottom is golden brown.
  4. Add a portion of the cooked chicken or shrimp, a handful of bean sprouts, and a sprinkle of green onions on one half of the pancake.
  5. Fold the pancake in half and cook for another 1-2 minutes until the filling is heated through.
  6. Remove the pancake from the skillet and keep warm while you repeat the process with the remaining batter and filling.
  7. Serve the pancakes warm, garnished with fresh cilantro and mint leaves, and lime wedges on the side. Drizzle with Sriracha or hoisin sauce as desired.
