Crispy Herb-Infused Fish Fritters with Dipping Sauce

- 1/4 cup finely chopped scallions

- 1 tablespoon fish sauce
- 1 teaspoon granulated sugar
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon sea salt
- 1 egg, beaten
- 1/2 cup breadcrumbs for coating
- Vegetable oil for frying
- For the Dipping Sauce:
- 1/4 cup fish sauce
- 1/4 cup water
- 2 tablespoons granulated sugar
- 1 tablespoon freshly squeezed lime juice
- 1 clove minced garlic
- 1 small red chili, thinly sliced (optional)
Instructions
- In a food processor, blend the fish fillets until finely chopped. Add the cooked rice, scallions, cilantro, mint, garlic, fish sauce, sugar, black pepper, salt, and beaten egg. Pulse until the mixture is well combined but retains some texture.
- Shape the mixture into small round fritters, approximately 2 inches across. Roll each fritter in breadcrumbs to coat evenly.
- In a large skillet, heat about 1/4 inch of vegetable oil over medium heat. Once the oil is shimmering, carefully add the fritters in batches, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side until they are golden and crispy. Remove and place on a plate lined with paper towels to absorb any excess oil.
- To prepare the dipping sauce, whisk together fish sauce, water, sugar, lime juice, minced garlic, and sliced chili in a small bowl until the sugar dissolves completely.
- Serve the crispy fish fritters warm, garnished with additional fresh herbs, alongside the zesty dipping sauce for a delightful experience.

- For an extra kick, increase the amount of chili in the dipping sauce or mix in diced jalapeños into the fritter mixture.
- Feel free to swap the white fish for shrimp or a seafood blend for a unique twist on flavor.
