Ingredients

  • 1/2 pound ground pork
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons beef drippings (or bacon grease)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, combine the ground venison and ground pork. Mix well to combine.
  2. Add the salt, black pepper, garlic powder, onion powder, dried thyme, crushed red pepper flakes (if using), and Worcestershire sauce to the meat mixture. Mix until all ingredients are evenly incorporated.
  3. Shape the mixture into patties, about 2-3 inches in diameter and 1/2 inch thick. You should get about 8-10 patties.
  4. Heat a large skillet over medium heat and add the beef drippings. Allow the drippings to melt and heat up.
  5. Once the drippings are hot, add the sausage patties to the skillet in a single layer. Cook for about 4-5 minutes on each side, or until the patties are browned and cooked through (internal temperature should reach 160°F).
  6. Remove the patties from the skillet and let them rest on a paper towel-lined plate to absorb excess grease.
  7. Garnish with fresh parsley before serving.
