Ingredients

  • 4 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon sugar
  • 4 cups vegetable broth
  • 1 cup dry white wine
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 4 slices of crusty bread
  • 1 cup Gruyère cheese, grated

Instructions

  1. In a large pot, heat the olive oil and butter over medium heat.
  2. Add the sliced onions and sugar, cooking until the onions are caramelized, about 20-25 minutes.
  3. Pour in the white wine and cook for an additional 5 minutes, scraping the bottom of the pot.
  4. Add the vegetable broth and thyme, then season with salt and pepper. Simmer for 15 minutes.
  5. Meanwhile, preheat the oven to 400°F (200°C).
  6. Place the slices of bread on a baking sheet, top with Gruyère cheese, and bake until the cheese is bubbly and golden.
  7. Serve the soup hot, topped with the Gruyère toast.
