- 4 large onions, thinly sliced

- 1 tablespoon butter
- 1 teaspoon sugar
- 4 cups vegetable broth
- 1 cup dry white wine
- 1 teaspoon thyme
- Salt and pepper to taste
- 4 slices of crusty bread
- 1 cup Gruyère cheese, grated
Instructions
- In a large pot, heat the olive oil and butter over medium heat.
- Add the sliced onions and sugar, cooking until the onions are caramelized, about 20-25 minutes.
- Pour in the white wine and cook for an additional 5 minutes, scraping the bottom of the pot.
- Add the vegetable broth and thyme, then season with salt and pepper. Simmer for 15 minutes.
- Meanwhile, preheat the oven to 400°F (200°C).
- Place the slices of bread on a baking sheet, top with Gruyère cheese, and bake until the cheese is bubbly and golden.
- Serve the soup hot, topped with the Gruyère toast.
