- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 cup baby spinach
- Juice of 1 lemon
- Chopped fresh basil for garnish

Instructions
- Warm the olive oil in a large, heavy-bottomed pot over medium heat.
- Add the chopped onion and minced garlic, stirring frequently until the onion becomes soft and translucent, roughly 5 minutes.
- Incorporate the carrot, celery, and red bell pepper, cooking for an additional 5 minutes until they begin to soften.
- Introduce the zucchini and diced tomatoes to the pot, allowing them to cook for about 3 minutes.
- Pour in the vegetable stock and white wine, followed by the oregano, thyme, saffron, bay leaf, salt, and pepper.
- Bring the mixture to a gentle boil, then reduce the heat to maintain a simmer for 15 minutes.
- Add the green beans and spinach, cooking for another 5 minutes until the green beans are tender yet crisp.
- Remove the bay leaf and stir in the fresh lemon juice, adjusting the seasoning to your liking.
- Ladle the stew into bowls, garnishing with fresh basil, and serve alongside slices of crusty baguette.
