  • 4 cups vegetable stock
  • 1 cup dry white wine
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon saffron strands
  • 1 bay leaf
  • Salt and freshly ground black pepper to taste
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 cup baby spinach
  • Juice of 1 lemon
  • Chopped fresh basil for garnish
  • Crusty baguette for serving

Instructions

  1. Warm the olive oil in a large, heavy-bottomed pot over medium heat.
  2. Add the chopped onion and minced garlic, stirring frequently until the onion becomes soft and translucent, roughly 5 minutes.
  3. Incorporate the carrot, celery, and red bell pepper, cooking for an additional 5 minutes until they begin to soften.
  4. Introduce the zucchini and diced tomatoes to the pot, allowing them to cook for about 3 minutes.
  5. Pour in the vegetable stock and white wine, followed by the oregano, thyme, saffron, bay leaf, salt, and pepper.
  6. Bring the mixture to a gentle boil, then reduce the heat to maintain a simmer for 15 minutes.
  7. Add the green beans and spinach, cooking for another 5 minutes until the green beans are tender yet crisp.
  8. Remove the bay leaf and stir in the fresh lemon juice, adjusting the seasoning to your liking.
  9. Ladle the stew into bowls, garnishing with fresh basil, and serve alongside slices of crusty baguette.
