- 2 medium zucchini, thinly sliced
- 2 medium yellow squash, thinly sliced
- 2 medium tomatoes, thinly sliced
- 1 medium onion, thinly sliced
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the sliced zucchini, yellow squash, tomatoes, and onion. Add the minced garlic, olive oil, thyme, rosemary, salt, and pepper. Toss until the vegetables are well coated.
- In a 9×13-inch baking dish, layer the vegetable mixture in an overlapping pattern, starting from one end to the other.
- Sprinkle the shredded mozzarella and grated Parmesan evenly over the top of the layered vegetables.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
- Allow the tian to cool for a few minutes before garnishing with fresh basil leaves, if desired. Serve warm.
Notes
- For added flavor, consider adding sliced bell peppers or mushrooms to the vegetable mixture.
- To make it a heartier dish, layer cooked quinoa or rice at the bottom of the baking dish before adding the vegetables.
