Description

Ingredients

  • 2 medium zucchini, thinly sliced
  • 2 medium yellow squash, thinly sliced
  • 2 medium tomatoes, thinly sliced
  • 1 medium onion, thinly sliced
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the sliced zucchini, yellow squash, tomatoes, and onion. Add the minced garlic, olive oil, thyme, rosemary, salt, and pepper. Toss until the vegetables are well coated.
  3. In a 9×13-inch baking dish, layer the vegetable mixture in an overlapping pattern, starting from one end to the other.
  4. Sprinkle the shredded mozzarella and grated Parmesan evenly over the top of the layered vegetables.
  5. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  6. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
  7. Allow the tian to cool for a few minutes before garnishing with fresh basil leaves, if desired. Serve warm.

  • For added flavor, consider adding sliced bell peppers or mushrooms to the vegetable mixture.
  • To make it a heartier dish, layer cooked quinoa or rice at the bottom of the baking dish before adding the vegetables.
