A delicious and hearty Vegan Smoked Mushroom & Bean Stew that is perfect for a comforting meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 8 ounces smoked mushrooms, chopped
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes, with juice
  • 2 cups vegetable broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups kale, chopped
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
  2. Stir in the minced garlic and diced red bell pepper, cooking for an additional 3 minutes until fragrant.
  3. Add the chopped smoked mushrooms to the pot and cook for another 5 minutes, allowing them to release their moisture.
  4. Stir in the black beans, kidney beans, diced tomatoes (with juice), vegetable broth, smoked paprika, ground cumin, and dried thyme. Season with salt and pepper to taste.
  5. Bring the stew to a boil, then reduce the heat to low and let it simmer uncovered for 20-25 minutes, stirring occasionally.
  6. In the last 5 minutes of cooking, add the chopped kale and stir until wilted.
  7. Serve hot, garnished with fresh parsley.

Notes

  • For added heat, include a pinch of red pepper flakes or a diced jalapeño during the sautéing step.
  • Substitute the kale with spinach or Swiss chard for a different flavor and texture.
