A delicious and hearty Vegan Smoked Mushroom & Bean Stew that is perfect for a comforting meal.
Ingredients

- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 8 ounces smoked mushrooms, chopped
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (14.5 ounces) diced tomatoes, with juice
- 2 cups vegetable broth
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups kale, chopped
- Fresh parsley, for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and diced red bell pepper, cooking for an additional 3 minutes until fragrant.
- Add the chopped smoked mushrooms to the pot and cook for another 5 minutes, allowing them to release their moisture.
- Stir in the black beans, kidney beans, diced tomatoes (with juice), vegetable broth, smoked paprika, ground cumin, and dried thyme. Season with salt and pepper to taste.
- Bring the stew to a boil, then reduce the heat to low and let it simmer uncovered for 20-25 minutes, stirring occasionally.
- In the last 5 minutes of cooking, add the chopped kale and stir until wilted.
- Serve hot, garnished with fresh parsley.
Notes
- For added heat, include a pinch of red pepper flakes or a diced jalapeño during the sautéing step.
- Substitute the kale with spinach or Swiss chard for a different flavor and texture.
