Ingredients

  • 1 cup raw pistachios
  • 1/2 cup rolled oats
  • 1/4 cup almond butter
  • 1/4 cup plant-based protein powder (vanilla flavor recommended)
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon vanilla extract
  • 1/4 cup water (as needed)

Instructions

  1. In a food processor, combine the pitted dates, raw pistachios, rolled oats, almond butter, protein powder, sea salt, and vanilla extract. Pulse until the mixture is crumbly and well combined.
  2. If the mixture is too dry, add water one tablespoon at a time until it holds together but is not sticky.
  3. Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  4. Transfer the mixture into the prepared baking dish and press it down firmly and evenly with your hands or a spatula.
  5. Cover and refrigerate for at least 1 hour to firm up.
  6. Once set, lift the bars out of the dish using the parchment overhang and cut into squares or rectangles.
  7. Store in an airtight container in the refrigerator for up to one week.

  • For added flavor, consider mixing in a tablespoon of cocoa powder or a handful of dried fruit like cranberries or apricots.
