A healthy and delicious snack, these Vegan Pistachio Protein Bars are perfect for a quick energy boost.
Ingredients

- 1 cup pitted dates
- 1 cup raw pistachios
- 1/2 cup rolled oats
- 1/4 cup almond butter
- 1/4 cup plant-based protein powder (vanilla flavor recommended)
- 1/4 teaspoon sea salt
- 1/4 teaspoon vanilla extract
- 1/4 cup water (as needed)
Instructions
- In a food processor, combine the pitted dates, raw pistachios, rolled oats, almond butter, protein powder, sea salt, and vanilla extract. Pulse until the mixture is crumbly and well combined.
- If the mixture is too dry, add water one tablespoon at a time until it holds together but is not sticky.
- Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
- Transfer the mixture into the prepared baking dish and press it down firmly and evenly with your hands or a spatula.
- Cover and refrigerate for at least 1 hour to firm up.
- Once set, lift the bars out of the dish using the parchment overhang and cut into squares or rectangles.
- Store in an airtight container in the refrigerator for up to one week.
Notes
- For added flavor, consider mixing in a tablespoon of cocoa powder or a handful of dried fruit like cranberries or apricots.
- Substitute the pistachios with any nut or seed of your choice, such as almonds or sunflower seeds, for a different taste and texture.
