  • 1/2 cup coconut oil, melted
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder

  • 3 ripe peaches, sliced
  • 1/2 cup sliced almonds

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the almond milk, melted coconut oil, brown sugar, and vanilla extract.
  4. Combine the wet and dry ingredients until just mixed.
  5. In a greased cake pan, arrange the sliced peaches and sprinkle the sliced almonds on top.
  6. Pour the cake batter over the peaches and almonds.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Let it cool for a few minutes before inverting onto a serving plate.
