  • 2 cups mixed nuts (walnuts, almonds, pecans, roughly chopped)
  • 1 cup cooked lentils (green or brown)
  • 1 cup breadcrumbs (whole wheat or gluten-free)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup grated carrots
  • 1 cup chopped mushrooms
  • 1/2 cup vegetable broth
  • 1/4 cup nutritional yeast
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened, about 5 minutes.
  3. Add the chopped mushrooms and grated carrots to the skillet, cooking for another 5-7 minutes until the mushrooms are tender.
  4. In a large mixing bowl, combine the mixed nuts, cooked lentils, breadcrumbs, sautéed vegetables, vegetable broth, nutritional yeast, soy sauce, thyme, rosemary, smoked paprika, salt, and pepper. Mix until well combined.
  5. Transfer the mixture to the prepared loaf pan, pressing it down firmly to pack it in.
  6. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and firm to the touch.
  7. Let the nut roast cool in the pan for about 10 minutes before slicing and serving.

Notes

  • For added flavor, consider adding a tablespoon of fresh herbs like parsley or basil to the mixture.
  • You can also top the nut roast with a homemade tomato sauce or a vegan gravy before serving for extra moisture and taste.
