Description
A delicious and hearty Vegan Nut Roast recipe that is perfect for any occasion.
Ingredients
Scale
- 2 cups mixed nuts (walnuts, almonds, pecans, roughly chopped)
- 1 cup cooked lentils (green or brown)
- 1 cup breadcrumbs (whole wheat or gluten-free)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup grated carrots
- 1 cup chopped mushrooms
- 1/2 cup vegetable broth
- 1/4 cup nutritional yeast
- 2 tablespoons soy sauce or tamari
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened, about 5 minutes.
- Add the chopped mushrooms and grated carrots to the skillet, cooking for another 5-7 minutes until the mushrooms are tender.
- In a large mixing bowl, combine the mixed nuts, cooked lentils, breadcrumbs, sautéed vegetables, vegetable broth, nutritional yeast, soy sauce, thyme, rosemary, smoked paprika, salt, and pepper. Mix until well combined.
- Transfer the mixture to the prepared loaf pan, pressing it down firmly to pack it in.
- Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and firm to the touch.
- Let the nut roast cool in the pan for about 10 minutes before slicing and serving.
Notes
- For added flavor, consider adding a tablespoon of fresh herbs like parsley or basil to the mixture.
- You can also top the nut roast with a homemade tomato sauce or a vegan gravy before serving for extra moisture and taste.
- For a spicier kick, add a teaspoon of red pepper flakes to the mixture.
