Description

Delicious Vanilla Almond Snowberry Truffles made with almond flour and freeze-dried strawberries.


Ingredients

  • 1 cup almond flour
  • 1/2 cup powdered sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/2 cup freeze-dried strawberries, crushed
  • 1/4 cup white chocolate chips (optional for coating)
  • Pinch of salt

Instructions

  1. In a mixing bowl, combine almond flour, powdered sugar, cocoa powder, and a pinch of salt. Mix well until combined.
  2. Add melted coconut oil, vanilla extract, and almond extract to the dry ingredients. Stir until a dough forms.
  3. Gently fold in the crushed freeze-dried strawberries until evenly distributed.
  4. Refrigerate the mixture for about 30 minutes to firm up.
  5. Once chilled, scoop out small portions of the mixture and roll them into balls, about 1 inch in diameter.
  6. If using, melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
  7. Dip each truffle into the melted white chocolate, allowing excess to drip off, then place on a parchment-lined baking sheet.
  8. Refrigerate the truffles for at least 15 minutes to set the chocolate coating.

Notes

  • For a different flavor, substitute the almond extract with orange or peppermint extract.
  • Add chopped nuts or shredded coconut to the truffle mixture for added texture and flavor.
