Delicious Vanilla Almond Snowberry Truffles made with almond flour and freeze-dried strawberries.
Ingredients

- 1 cup almond flour
- 1/2 cup powdered sugar
- 1/4 cup unsweetened cocoa powder
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1/2 cup freeze-dried strawberries, crushed
- 1/4 cup white chocolate chips (optional for coating)
- Pinch of salt
Instructions
- In a mixing bowl, combine almond flour, powdered sugar, cocoa powder, and a pinch of salt. Mix well until combined.
- Add melted coconut oil, vanilla extract, and almond extract to the dry ingredients. Stir until a dough forms.
- Gently fold in the crushed freeze-dried strawberries until evenly distributed.
- Refrigerate the mixture for about 30 minutes to firm up.
- Once chilled, scoop out small portions of the mixture and roll them into balls, about 1 inch in diameter.
- If using, melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
- Dip each truffle into the melted white chocolate, allowing excess to drip off, then place on a parchment-lined baking sheet.
- Refrigerate the truffles for at least 15 minutes to set the chocolate coating.
Notes
- For a different flavor, substitute the almond extract with orange or peppermint extract.
- Add chopped nuts or shredded coconut to the truffle mixture for added texture and flavor.
