Ingredients

  • 1 pound flank steak
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons extra virgin olive oil
  • 4 hearty rolls (like ciabatta or bolillos)
  • 1 cup fresh arugula or mixed greens
  • 1 medium tomato, thinly sliced
  • 1 ripe avocado, thinly sliced
  • 1/2 cup creamy mayonnaise
  • 1 tablespoon fresh lime juice

Instructions

  1. Heat your grill or a grill pan to a medium-high temperature.
  2. In a mixing bowl, combine garlic powder, onion powder, smoked paprika, salt, and pepper to create a flavorful rub.
  3. Generously coat the flank steak with the spice blend.
  4. Drizzle the grill with olive oil and place the seasoned steak on it.
  5. Grill for approximately 4-5 minutes per side for a medium-rare finish, adjusting the time based on your preferred doneness.
  6. Transfer the steak to a cutting board and allow it to rest for about 5 minutes before slicing it thinly against the grain.
  7. While the steak is resting, cut the rolls in half and toast them lightly on the grill or in a toaster until golden brown.
  8. In a separate bowl, combine the mayonnaise with lime juice and mix well.
  9. Spread the zesty mayo on the inside of each toasted roll.
  10. Assemble the sandwiches by layering the sliced steak on the bottom half of each roll, followed by arugula or mixed greens, slices of tomato, and avocado.
  11. Place the top half of the roll on each sandwich and enjoy your delicious creation right away.
