Instructions
- Preheat your waffle iron according to the manufacturer’s instructions.
- In a large bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined.
- In another bowl, mix the milk, ube puree, sugar, vegetable oil, eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix; a few lumps are okay.
- Lightly grease the preheated waffle iron with cooking spray or a little oil. Pour the recommended amount of batter onto the waffle iron (usually about 1/2 to 3/4 cup, depending on your waffle maker).
- Close the lid and cook until the waffles are golden brown and crispy, usually about 5-7 minutes.
- Carefully remove the waffles and keep them warm in a low oven (around 200°F) while you repeat with the remaining batter.
Notes
- For extra crunch, try adding 1/2 cup of crushed cornflakes to the batter.
- You can top the waffles with whipped cream, fresh fruit, or a drizzle of maple syrup for added sweetness.
