Ingredients

  • 1 cup ube puree (canned or homemade)

  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined.
  3. In another bowl, mix the milk, ube puree, sugar, vegetable oil, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix; a few lumps are okay.
  5. Lightly grease the preheated waffle iron with cooking spray or a little oil. Pour the recommended amount of batter onto the waffle iron (usually about 1/2 to 3/4 cup, depending on your waffle maker).
  6. Close the lid and cook until the waffles are golden brown and crispy, usually about 5-7 minutes.
  7. Carefully remove the waffles and keep them warm in a low oven (around 200°F) while you repeat with the remaining batter.
