  • 1/2 cup caster sugar
  • 1 teaspoon pure vanilla extract

  • 2 teaspoons gelatin powder
  • 1/4 cup chilled water
  • 1 1/2 cups fresh tomatoes, blended (approximately 4 medium-sized)
  • 1 tablespoon extra virgin olive oil
  • Fresh basil leaves for decoration

Instructions

  1. Pour the heavy whipping cream and full-fat milk into a saucepan. Add the caster sugar, vanilla extract, and sea salt. Warm the mixture over medium heat, stirring gently until it is steaming but not boiling. Remove from heat once hot.
  2. In a separate small bowl, combine the gelatin powder with the chilled water and let it sit undisturbed for about 5 minutes to allow it to bloom.
  3. Once the cream mixture is steaming, incorporate the bloomed gelatin, stirring until it is completely dissolved.
  4. Fold in the blended tomatoes and extra virgin olive oil, mixing thoroughly until the ingredients are well integrated.
  5. Carefully transfer the mixture into small cups or ramekins. Cover them with plastic wrap and place in the refrigerator for a minimum of 4 hours, or until the panna cotta has fully set.
  6. To present, gently run a knife around the edges of each panna cotta and carefully flip them onto serving plates, or serve them directly in their cups. Finish with a sprinkle of fresh basil leaves for an aromatic touch.
