Description

Discover the best recipe for Ukrainian Potato Dumplings, also known as Ukrainian Potato Pillows.

Ingredients

Scale
  • 2 cups all-purpose flour, plus extra for dusting
  • 1 teaspoon sea salt
  • 1 pound potatoes, peeled and diced
  • 1 large egg
  • 1 tablespoon melted butter
  • 1/4 cup sour cream
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup finely chopped fresh dill (optional)
  • 1/2 cup caramelized onions (for garnish)

Instructions

  1. Begin by boiling the diced potatoes in a large pot of salted water until they are fork-tender, which should take around 15-20 minutes. Once cooked, drain the potatoes and allow them to cool for a few minutes.
  2. Next, mash the potatoes in a bowl until they are completely smooth and let them cool down to room temperature.
  3. Incorporate the egg, melted butter, sour cream, sea salt, and black pepper into the mashed potatoes, stirring until everything is thoroughly mixed.
  4. Gradually blend in the flour, kneading gently until a soft, pliable dough forms. If the dough feels too sticky, sprinkle in a bit more flour as needed.
  5. On a floured surface, roll the dough out to about 1/4-inch thick. Use a round cutter or a glass to cut out circles approximately 3 inches in diameter.
  6. Spoon a small amount of the potato filling onto the center of each circle. Fold the dough over to create a semi-circle and firmly pinch the edges to ensure they are sealed.
  7. Bring a large pot of salted water to a rolling boil. Carefully drop the dumplings in batches into the water and cook until they rise to the top, which should take about 3-5 minutes.
  8. Using a slotted spoon, transfer the dumplings to a serving plate. Serve them warm, garnished with caramelized onions and a sprinkle of fresh dill if you like.

Notes

  • For an extra layer of flavor, consider mixing in some grated cheese into the potato filling.
  • You can also enhance the dish by drizzling melted butter over the dumplings or adding crispy bacon bits for a savory touch.
