Instructions
- Make the chia pudding (prepare ahead): Mix chia seeds, coconut milk, maple syrup, and salt in a bowl. Refrigerate for at least 4 hours or overnight until thickened.
- Blend the smoothie: In a blender, combine frozen ube, banana, coconut milk, maple syrup, and vanilla. Blend until creamy and smooth.
- Assemble the bowl: Spoon coconut chia pudding into a bowl. Pour or swirl the ube smoothie over the pudding for a beautiful layered effect.
- Optional toppings: Add fresh fruit, toasted coconut flakes, or nuts if you like.
