Ingredients

- 1 cup ube puree
- 4 large eggs
- 1/4 cup sugar
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup milk
- 1/4 cup melted butter
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the ube puree, eggs, and sugar, and whisk until smooth.
- In another bowl, mix the flour, baking powder, and salt.
- Gradually add the dry ingredients to the ube mixture, alternating with the milk and melted butter, and mix until well combined.
- Using a spoon or ice cream scoop, drop the batter onto the prepared baking sheet.
- Bake for 15-20 minutes or until the tops are lightly golden and a toothpick inserted comes out clean.
- Let cool slightly before serving.
Notes
- For a richer flavor, you can add a teaspoon of vanilla extract.
- Store leftovers in an airtight container for up to 3 days.
- These can be served warm or at room temperature.
