Delicious Ube Mochi Donuts with Coconut Shreds, perfect for any occasion!
Ingredients

- 2 cups glutinous rice flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup ube puree (canned or homemade)
- 1/2 cup coconut milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup shredded coconut (sweetened or unsweetened)
- Oil for frying
Instructions
- In a large mixing bowl, combine the glutinous rice flour, sugar, baking powder, and salt. Mix well.
- In another bowl, whisk together the ube puree, coconut milk, egg, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix until a thick batter forms. Fold in the shredded coconut.
- Heat oil in a deep fryer or large pot to 350°F.
- Using a donut cutter or two round cookie cutters, cut out donut shapes from the batter. If you don’t have a cutter, you can shape them by hand into rings.
- Carefully drop the donuts into the hot oil, frying a few at a time until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
- Allow the donuts to cool slightly before serving.
Notes
- For a richer flavor, consider adding a pinch of cinnamon or nutmeg to the batter.
- You can glaze the donuts with a simple mixture of powdered sugar and coconut milk for added sweetness.
