Ingredients

  • 2 cups glutinous rice flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup ube puree (canned or homemade)
  • 1/2 cup coconut milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut (sweetened or unsweetened)
  • Oil for frying

Instructions

  1. In a large mixing bowl, combine the glutinous rice flour, sugar, baking powder, and salt. Mix well.
  2. In another bowl, whisk together the ube puree, coconut milk, egg, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and mix until a thick batter forms. Fold in the shredded coconut.
  4. Heat oil in a deep fryer or large pot to 350°F.
  5. Using a donut cutter or two round cookie cutters, cut out donut shapes from the batter. If you don’t have a cutter, you can shape them by hand into rings.
  6. Carefully drop the donuts into the hot oil, frying a few at a time until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
  7. Allow the donuts to cool slightly before serving.
