A delightful dessert combining the flavors of ube and coconut in a mochi waffle cone.
Ingredients

- 1 cup glutinous rice flour
- 1/2 cup sugar
- 1/2 cup coconut milk
- 1/2 cup ube puree
- 1/4 cup water
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup shredded coconut (for garnish)
Instructions
- In a mixing bowl, combine glutinous rice flour, sugar, baking powder, and salt.
- Add coconut milk, ube puree, and water to the dry ingredients and mix until smooth.
- Preheat the waffle maker and lightly grease it.
- Pour a ladleful of the mochi batter into the waffle maker and close the lid.
- Cook for about 3-5 minutes or until the waffle is golden brown.
- Carefully remove the waffle and shape it into a cone while it’s still warm.
- Let the cone cool and then garnish with shredded coconut before serving.
Notes
- Make sure to work quickly when shaping the cones as the mochi will harden as it cools.
- Experiment with different fillings for the cones, such as ice cream or fruit.
