Description

A delightful dessert combining the flavors of ube and coconut in a mochi waffle cone.

Ingredients

Scale
  • 1 cup glutinous rice flour
  • 1/2 cup sugar
  • 1/2 cup coconut milk
  • 1/2 cup ube puree
  • 1/4 cup water
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup shredded coconut (for garnish)

Instructions

  1. In a mixing bowl, combine glutinous rice flour, sugar, baking powder, and salt.
  2. Add coconut milk, ube puree, and water to the dry ingredients and mix until smooth.
  3. Preheat the waffle maker and lightly grease it.
  4. Pour a ladleful of the mochi batter into the waffle maker and close the lid.
  5. Cook for about 3-5 minutes or until the waffle is golden brown.
  6. Carefully remove the waffle and shape it into a cone while it’s still warm.
  7. Let the cone cool and then garnish with shredded coconut before serving.

Notes

  • Make sure to work quickly when shaping the cones as the mochi will harden as it cools.
  • Experiment with different fillings for the cones, such as ice cream or fruit.
