Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 cup whole milk
  • 1 cup heavy cream
  • 4 large eggs
  • ¾ cup brown sugar, packed
  • 2 teaspoons ground ginger
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 cup fresh ginger, peeled and finely grated
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
  3. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake for 8-10 minutes until lightly golden. Remove from the oven and let cool.
  4. In a large mixing bowl, whisk together the milk, heavy cream, eggs, brown sugar, ground ginger, vanilla extract, ground cinnamon, and salt until smooth.
  5. In a small bowl, mix the grated fresh ginger with cornstarch until well coated. Stir the ginger mixture into the custard base.
  6. Pour half of the custard mixture into the cooled pie crust. Bake for 20 minutes.
  7. Remove from the oven and gently pour the remaining custard mixture on top. Return to the oven and bake for an additional 25-30 minutes, or until the custard is set but still slightly jiggly in the center.
  8. Allow the pie to cool at room temperature for at least 1 hour, then refrigerate for at least 2 hours before serving.

Notes

  • For a spicier kick, add an extra teaspoon of ground ginger to the custard mixture.
  • To make it a chocolate ginger custard pie, swirl in ½ cup of melted dark chocolate into the custard before pouring it into the crust.
