A delicious Two-Tone Ginger Custard Pie with a unique blend of flavors and textures.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 1 cup whole milk
- 1 cup heavy cream
- 4 large eggs
- ¾ cup brown sugar, packed
- 2 teaspoons ground ginger
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 1 cup fresh ginger, peeled and finely grated
- 1 tablespoon cornstarch
Instructions
- Preheat the oven to 350°F.
- In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
- Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake for 8-10 minutes until lightly golden. Remove from the oven and let cool.
- In a large mixing bowl, whisk together the milk, heavy cream, eggs, brown sugar, ground ginger, vanilla extract, ground cinnamon, and salt until smooth.
- In a small bowl, mix the grated fresh ginger with cornstarch until well coated. Stir the ginger mixture into the custard base.
- Pour half of the custard mixture into the cooled pie crust. Bake for 20 minutes.
- Remove from the oven and gently pour the remaining custard mixture on top. Return to the oven and bake for an additional 25-30 minutes, or until the custard is set but still slightly jiggly in the center.
- Allow the pie to cool at room temperature for at least 1 hour, then refrigerate for at least 2 hours before serving.
Notes
- For a spicier kick, add an extra teaspoon of ground ginger to the custard mixture.
- To make it a chocolate ginger custard pie, swirl in ½ cup of melted dark chocolate into the custard before pouring it into the crust.
