Description

A comforting and hearty Tuscan soup known as Zuppa Toscana, featuring Italian sausage, potatoes, and kale in a creamy broth.


Ingredients

  • 1 pound Italian sausage, casings removed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 large potatoes, thinly sliced
  • 1 cup kale, chopped
  • 1 cup heavy cream
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the Italian sausage and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
  3. Add the diced onion and minced garlic to the pot and sauté until the onion is translucent, about 3-4 minutes.
  4. Pour in the chicken broth and add the sliced potatoes. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
  5. Stir in the chopped kale and cook for an additional 5 minutes until the kale is wilted.
  6. Reduce the heat to low and stir in the heavy cream. Add red pepper flakes, salt, and pepper to taste.
  7. Heat through for 2-3 minutes without boiling.
  8. Serve hot, garnished with additional red pepper flakes if desired.

Notes

  • For a lighter version, substitute half-and-half for the heavy cream.
  • You can also add diced carrots or celery for extra vegetables.
  • If you prefer a spicier soup, increase the amount of red pepper flakes or add a dash of hot sauce.
