Description
A comforting and hearty Tuscan soup known as Zuppa Toscana, featuring Italian sausage, potatoes, and kale in a creamy broth.
Ingredients

- 1 pound Italian sausage, casings removed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 large potatoes, thinly sliced
- 1 cup kale, chopped
- 1 cup heavy cream
- 1 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the Italian sausage and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
- Add the diced onion and minced garlic to the pot and sauté until the onion is translucent, about 3-4 minutes.
- Pour in the chicken broth and add the sliced potatoes. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
- Stir in the chopped kale and cook for an additional 5 minutes until the kale is wilted.
- Reduce the heat to low and stir in the heavy cream. Add red pepper flakes, salt, and pepper to taste.
- Heat through for 2-3 minutes without boiling.
- Serve hot, garnished with additional red pepper flakes if desired.
Notes
- For a lighter version, substitute half-and-half for the heavy cream.
- You can also add diced carrots or celery for extra vegetables.
- If you prefer a spicier soup, increase the amount of red pepper flakes or add a dash of hot sauce.
