- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon red pepper flakes (adjust to taste)
- 1 cup cherry tomatoes, halved
- 1 cup baby spinach
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add shrimp and season with salt and pepper. Cook for 2-3 minutes on each side until shrimp are pink and opaque. Remove shrimp from skillet and set aside.
- In the same skillet, melt the butter over medium heat.
- Add minced garlic and red pepper flakes, cooking for about 1 minute until fragrant.
- Add cherry tomatoes to the skillet and cook for 2-3 minutes until they start to soften.
- Stir in the baby spinach and cook until wilted.
- Pour in the heavy cream and bring to a simmer.
- Stir in the Parmesan cheese until melted and the sauce is creamy.
- Return the shrimp to the skillet and toss to coat in the sauce.
- Cook for an additional 2 minutes to heat through.
- Serve immediately, garnished with fresh basil leaves.
Notes
- For a lighter version, substitute half of the heavy cream with chicken broth.
- For added flavor, squeeze fresh lemon juice over the shrimp before serving.
