Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add shrimp and season with salt and pepper. Cook for 2-3 minutes on each side until shrimp are pink and opaque. Remove shrimp from skillet and set aside.
  3. In the same skillet, melt the butter over medium heat.
  4. Add minced garlic and red pepper flakes, cooking for about 1 minute until fragrant.
  5. Add cherry tomatoes to the skillet and cook for 2-3 minutes until they start to soften.
  6. Stir in the baby spinach and cook until wilted.
  7. Pour in the heavy cream and bring to a simmer.
  8. Stir in the Parmesan cheese until melted and the sauce is creamy.
  9. Return the shrimp to the skillet and toss to coat in the sauce.
  10. Cook for an additional 2 minutes to heat through.
  11. Serve immediately, garnished with fresh basil leaves.
